In Ammerschwihr, the beating heart of Alsace's vineyards, the winery Etienne Simonis opens its doors to you for an immersion in over 350 years of history and winemaking expertise. Heirs to a family tradition dating back to the late 17th century, Katia and Etienne Simonis have been passionately cultivating their 7 hectares of vines for 25 years, following the principles of organic farming and biodynamics. Their aim? To reveal the unique character of their terroirs while respecting the natural balance of the vines.
The cellar, where 1950s oak tuns, stainless steel vats and Burgundy barrels coexist, is the scene of a vinification without artifice. Here, the wine evolves in symbiosis with nature: only the yeasts present on the grapes transform the sugar into alcohol, thus preserving all the aromatic richness of the wine.
